I began this project because a number of people have expressed
an interest in finding out facts on food! These inquiries have
come to haunt me, because I have as much desire to learn and
share the information as the people who are actually inquiring.  
Over the years I have developed an extensive data base of food
facts. I have helped many people recreate an old family recipe
Because of my resources there are a number of Food
Establishments, Restaurateurs, and Chefs that regularly
contact me for technical recipe construction.

The "Dark Side is another never ending project that is dear to

I have a Masters Degree in "Bovine Scatology" and use it
every chance I can
I am a classically trained chef with disciplines in Multiple
Cuisines, Food Styling, Recipe Profiling, & Culinary Class
Instruction.
I am the former owner of "The Dive Café" a small walk up
diner on the Skydive Dallas Airport.
My Culinary Style is "Freestyle Eclectic". I follow all the
classics & traditions as well as all the nouveau-trends. I
find it hard to settle down when there is so much out there
to explore
